Perfect White Rice

Serves 12
5¼ cups water
3 cups basmati rice, rinsed and drained
1½ teaspoons salt
Combine the water, rice, and salt in a large saucepan. Bring to a boil over high heat and stir once. reduce the temperature to a simmer and cover the pot with a single layer of paper towel and then the lid. (The paper towel absorbs the steam.) Cook for 15 minutes. remove from the heat and let stand (still covered) for 10 minutes or longer before serving.
Ellen’s Tips
Rinsing rice is not necessary but doing so removes loose starch, making the rice less sticky.
